Bertrand Sourdais is geboren en getogen in Chinon en vertegenwoordigt de vijfde generatie op het familiewijngoed Domaine de Pallus. Verwacht hier echter geen louter traditionele Loire. Sourdais is opgeleid in de Bordeaux en in Spanje en maakt daarnaast wijnen in Ribera del Duero, op zijn domeinen Antídoto en Dominio de Es. Verrijkt met deze ervaring maakt hij Loirewijnen die zowel typisch Chinon als volledig uniek zijn.

Deze Le Clos is misschien wel Bertrands meest elegante cuvée. Zelf beschouwt hij ‘m in ieder geval als zijn referentie voor goede Cabernet Franc. De druiven oogst hij van een slechts één hectare tellend perceel met oude stokken in Le Clos, de wijngaard die je door moet om bij de wijnkelder te komen. De druiven zijn hier doorgaans als eerste rijp, dankzij de zuidoostelijke expositie.

Eenmaal geoogst, ontsteelt Bertrand de druiven om ze vervolgens gedurende 25-30 dagen te laten vergisten met schilinweking. De zo ontstane wijn rijpt hij vervolgens nog 18 maanden in eikenhouten Bourgognevaten tussen vijf en tien jaar oud.

Het levert een buitengewoon verfijnde Chinon op, met een verleidelijk en subtiel aroma van klein rood fruit, grafiet en ceder, sappige frisheid en mooie rijpe tannines. Een perfecte wijn voor bij verfijnde Franse gerechten, zoals duif, eendenborst of kalfsoester.

Proefnotitie

Robijnrode wijn met subtiele aroma’s van kers, framboos, cranberry, potloodslijpsel en ceder. Elegante stijl met puur, klein rood fruit, een opwekkende frisheid en rijpe tannines in de smaak. Verfijnde afdronk met laurier en toast.

Drinken bij

Fraaie, lichtvoetige wijn om te combineren met gevogelte of kalfsvlees, zoals duif met wijnjus, eendenborst met paddenstoelen of kalfsoester met gegrilde groene asperges. 

Houdbaarheid

Drinken vanaf 5 jaar; houdbaar tot ten minste 15 jaar na de oogst.
