Topwijnmaker Bertrand Sourdais maakt behalve geweldige Ribera del Duero’s in Spanje ook prachtige terroirwijnen op het ouderlijke Domaine Pallus, gelegen in het dorp Cravant-les-Coteaux. De in de heuvels gelegen wijngaarden van dit dorpje worden beschouwd als de grand cru-wijngaarden van de appellatie Chinon. Bertrand bezit er twaalf hectaren.

Het perceel La Croix Boissée heeft met z’n zuidelijke expositie een perfecte ligging op de heuvel van Cravant. De cabernet franc-stokken zijn er oud; het perceel werd aangeplant in 1974. De bodem bestaat uit een toplaag van zand en klei, met daaronder een diepere kalkstenen laag. Het geeft de wijn z’n typische, iets rokerige karakter.

Bertrand bewerkt z’n wijngaarden op biodynamische wijze. De opbrengsten houdt hij laag: gemiddeld dertig hectoliter per hectare. Na de oogst ontsteelt hij alle druiven, en vergist ze in open houten fusten. De schillen blijven nog zo’n 18-25 dagen bij de most. Vervolgens hevelt hij de wijn over naar deels nieuwe Bourgognevaten voor een rijping van 18 maanden.

De La Croix Boissée is dan ook een indrukwekkende Chinon, met een verfijnde geur en een opvallende concentratie en lengte. Een klassieke rode Loire, met tegelijkertijd de unieke signatuur van Bertrand Sourdais. Warm aanbevolen!
