The new creation from GAIA WINES is here to re-introduce Assyrtiko’s gifts and to reveal its ability to age over time. AMMONITE, a wine with a unique origin but also with a unique ripening process, which offers to the famous white variety of Santorini, it’s ability to behave like a red wine.
Created entirely from the harvest of the island’s rare century-old vineyard, it combines the know-how and the courage of GAIA WINES ιn a perfect way. Having rested for over 15 months within its organic mud, and with regular care from the winemakers’ experienced hands, and combined with a small amount of wine left for months in new French oak barrels, it offers an exciting profile: Large structure, impressive taste length, and complexity. It is an Assyrtiko that, with the correct storage and care, can continue to improve year by year.
Its name is inspired by the company’s emblem, the ammonite, a fossil of a marine organism, and the embossed artwork on the label. The Fibonacci mathematical sequence captures its geometric harmony.

Een wijnbedrijf helemaal van de grond af aan opzetten, valt niet mee. De Grieken Yiannis Paraskevopoulos, Leon Karatsalos en Christina Legaki deden het. Bijna letterlijk, want hun bedrijf kwam halverwege de jaren negentig tot bloei met de aankoop van 7 hectare wijngaard in Koutsi, een dorp in het herkomstgebied Nemea (Peloponnesos), op 550 meter hoogte.
De wijngaard met bijbehorende kelder ligt op goed drainerende, kalkhoudende grond. In combinatie met de steile helling, koele berglucht en de juiste blootstelling aan de zon levert dat druiven van goede kwaliteit op. Hét druivenras in de DOP Nemea is agiorgitiko, waar Gaia fruitige rode wijnen met zachte tannine van maakt.
Eén wijnmakerij is natuurlijk maar eenzaam, en daarom kocht het drietal een mooie, oude tomatenpureefabriek op het eiland Santorini en bouwde die liefdevol om tot wijnkelder. Hier produceert Gaia niet alleen kleine hoeveelheden prestigieuze wijn, maar ook exclusieve wijnazijn.
Het eiland heeft vulkanische, poreuze bodems en is blootgesteld aan veel zon en wind; omstandigheden waarin druivenstokken het best overleven als ze heel laag bij de grond groeien. Het inheemse witte ras assyrtiko voelt zich hier opperbest bij en levert volle, levendige, minerale wijnen op die zo stevig zijn, dat je ze zelfs bij lamsvlees kunt serveren.
