Thalassitis Submerged is een gewaagd (en geslaagd) experiment dat in 2009 door Gaia Wines werd gestart, met als doel te onderzoeken hoe een wijn van assyrtiko zich zou ontwikkelen wanneer deze jaren zou rijpen op een diepte van 25 meter onder de zee.
